🌱 Vegan Broccoli & Mushroom Stir Fry

A quick and easy plant-based stir fry that’s full of flavor, nutrient-packed, and ready in just 20 minutes! Perfect as a main dish with rice/noodles or as a healthy side.


🥢 Ingredients

  • 2 cups broccoli florets
  • 2 cups mushrooms (button or cremini), sliced
  • 2 Tbsp soy sauce (or tamari for gluten-free)
  • 1 Tbsp sesame oil (or olive oil)
  • 1 Tbsp rice vinegar (or lemon juice)
  • 1 Tbsp maple syrup (or agave)
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • ½ cup vegetable broth (or water)
  • 1 tsp cornstarch mixed with 2 Tbsp water (slurry, for thickening)
  • Sesame seeds & chopped green onions (for garnish)

👩‍🍳 Instructions

  1. Steam or blanch broccoli for 2–3 minutes until bright green and tender-crisp. Drain and set aside.
  2. Heat sesame oil in a skillet or wok. Add garlic and ginger, sauté for 1 minute until fragrant.
  3. Add mushrooms and cook until golden brown and tender.
  4. Stir in broccoli and toss together.
  5. Mix sauce (soy sauce, rice vinegar, maple syrup, and veggie broth). Pour into the skillet.
  6. Add cornstarch slurry and cook for 1–2 minutes until sauce thickens and coats the veggies.
  7. Garnish with sesame seeds and green onions.

🍚 Serving Ideas

  • Serve over steamed jasmine rice, brown rice, or quinoa.
  • Toss with noodles for a complete meal.
  • Add tofu or tempeh for extra protein.
