🌱 Vegan Cauliflower Cutlets
Tender cauliflower mixed with fresh herbs and spices, pan-fried until golden brown and crisp. Perfect as a snack, side dish, or light meal!
🥦 Ingredients
- 1 medium head of cauliflower (about 3 cups, steamed & mashed)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 Tbsp fresh parsley or dill (chopped)
- ½ cup breadcrumbs (use gluten-free if needed)
- 3 Tbsp all-purpose flour (or chickpea flour)
- 2 Tbsp nutritional yeast (optional, for cheesy flavor)
- ½ tsp paprika
- ½ tsp cumin
- Salt & pepper (to taste)
- 2–3 Tbsp olive oil (for frying)
👩🍳 Instructions
- Prepare cauliflower – Steam or boil until tender. Mash well and let it cool slightly.
- Mix – In a large bowl, combine mashed cauliflower, onion, garlic, herbs, breadcrumbs, flour, nutritional yeast, and spices. Mix until it forms a sticky dough.
- Shape – Form into small patties or cutlets.
- Cook – Heat olive oil in a skillet over medium heat. Fry cutlets for 3–4 minutes per side until golden brown and crispy.
- Serve – Enjoy with vegan sour cream, tahini sauce, or garlic yogurt dip (plant-based).

- For baking: Place patties on parchment paper and bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
- Add grated carrots, zucchini, or spinach for extra nutrients.
