🌱 Vegan Broccoli & Mushroom Stir Fry
A quick and easy plant-based stir fry that’s full of flavor, nutrient-packed, and ready in just 20 minutes! Perfect as a main dish with rice/noodles or as a healthy side.
🥢 Ingredients
- 2 cups broccoli florets
- 2 cups mushrooms (button or cremini), sliced
- 2 Tbsp soy sauce (or tamari for gluten-free)
- 1 Tbsp sesame oil (or olive oil)
- 1 Tbsp rice vinegar (or lemon juice)
- 1 Tbsp maple syrup (or agave)
- 2 garlic cloves, minced
- 1 tsp grated ginger
- ½ cup vegetable broth (or water)
- 1 tsp cornstarch mixed with 2 Tbsp water (slurry, for thickening)
- Sesame seeds & chopped green onions (for garnish)
👩🍳 Instructions
- Steam or blanch broccoli for 2–3 minutes until bright green and tender-crisp. Drain and set aside.
- Heat sesame oil in a skillet or wok. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add mushrooms and cook until golden brown and tender.
- Stir in broccoli and toss together.
- Mix sauce (soy sauce, rice vinegar, maple syrup, and veggie broth). Pour into the skillet.
- Add cornstarch slurry and cook for 1–2 minutes until sauce thickens and coats the veggies.
- Garnish with sesame seeds and green onions.
🍚 Serving Ideas
- Serve over steamed jasmine rice, brown rice, or quinoa.
- Toss with noodles for a complete meal.
- Add tofu or tempeh for extra protein.
