🥦 Ingredients

  • 1 medium head of cauliflower (about 3 cups, steamed & mashed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 Tbsp fresh parsley or dill (chopped)
  • ½ cup breadcrumbs (use gluten-free if needed)
  • 3 Tbsp all-purpose flour (or chickpea flour)
  • 2 Tbsp nutritional yeast (optional, for cheesy flavor)
  • ½ tsp paprika
  • ½ tsp cumin
  • Salt & pepper (to taste)
  • 2–3 Tbsp olive oil (for frying)

👩‍🍳 Instructions

  1. Prepare cauliflower – Steam or boil until tender. Mash well and let it cool slightly.
  2. Mix – In a large bowl, combine mashed cauliflower, onion, garlic, herbs, breadcrumbs, flour, nutritional yeast, and spices. Mix until it forms a sticky dough.
  3. Shape – Form into small patties or cutlets.
  4. Cook – Heat olive oil in a skillet over medium heat. Fry cutlets for 3–4 minutes per side until golden brown and crispy.
  5. Serve – Enjoy with vegan sour cream, tahini sauce, or garlic yogurt dip (plant-based).
