🌿 Ingredients
- 3 cups (240 g) desiccated coconut (finely shredded) + extra for sprinkling
- ¾ cup (180 ml) vegan condensed milk
- 1 ½ cups (262 g) vegan chocolate (chopped or chips)
- 1 tsp coconut oil
👩🍳 Instructions
- Make the filling
- In a mixing bowl, combine vegan condensed milk with 1 cup of desiccated coconut.
- Gradually add the remaining coconut, stirring until you form a thick, sticky dough.
- Shape the truffles
- Roll the mixture into small balls and place them on a parchment-lined tray.
- Freeze for about 15 minutes to firm up.
- Prepare the coating
- Melt the chocolate and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Dip and decorate
- Drop each coconut ball into the melted chocolate, coating it fully.
- Use two spoons to lift it out, then place back on the tray.
- Sprinkle with extra desiccated coconut while still wet.
- Set and serve
- Return to the freezer until the chocolate sets.
- Enjoy chilled straight from the fridge (the chocolate may soften if left out).
