🥥 Vegan Coconut Truffles

These coconut truffles are fun, delicious, and incredibly easy to make! A sweet coconut and vegan condensed milk filling coated in rich vegan chocolate, topped with a sprinkle of coconut. Perfect for gifting or keeping all to yourself.

🌿 Ingredients

  • 3 cups (240 g) desiccated coconut (finely shredded) + extra for sprinkling
  • ¾ cup (180 ml) vegan condensed milk
  • 1 ½ cups (262 g) vegan chocolate (chopped or chips)
  • 1 tsp coconut oil

👩‍🍳 Instructions

  1. Make the filling
    • In a mixing bowl, combine vegan condensed milk with 1 cup of desiccated coconut.
    • Gradually add the remaining coconut, stirring until you form a thick, sticky dough.
  2. Shape the truffles
    • Roll the mixture into small balls and place them on a parchment-lined tray.
    • Freeze for about 15 minutes to firm up.
  3. Prepare the coating
    • Melt the chocolate and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  4. Dip and decorate
    • Drop each coconut ball into the melted chocolate, coating it fully.
    • Use two spoons to lift it out, then place back on the tray.
    • Sprinkle with extra desiccated coconut while still wet.
  5. Set and serve
    • Return to the freezer until the chocolate sets.
    • Enjoy chilled straight from the fridge (the chocolate may soften if left out).
