Vegan Cucumber Sandwiches with Herbed Spread
Ingredients:
- Bread: Soft white or whole grain sandwich bread (crusts optional)
- Cucumber: 1 medium cucumber, thinly sliced
- Vegan cream cheese: ~1/2 cup (store-bought or homemade)
- Fresh herbs: Dill, chives, parsley (finely chopped – about 2 tbsp total)
- Garlic powder: 1/4 tsp (optional)
- Salt & pepper: To taste
- Lemon juice: 1 tsp (optional, for a tangy kick)
Instructions:
- Make the Herbed Spread
In a small bowl, mix:
- Vegan cream cheese
- Chopped fresh herbs
- Garlic powder (if using)
- Lemon juice
- Salt and pepper to taste
- Prepare the Bread
- Lightly toast or keep the bread soft (your preference).
- Spread a generous amount of the herbed cream cheese on one or both slices.
- Add Cucumber
- Lay out thin, overlapping slices of cucumber evenly across the bread.
- Assemble the Sandwich
- Place the second slice of bread on top.
- Press gently and cut into halves or quarters, depending on serving style.
