Vegan Cucumber Sandwiches with Herbed Spread

Ingredients:

  • Bread: Soft white or whole grain sandwich bread (crusts optional)
  • Cucumber: 1 medium cucumber, thinly sliced
  • Vegan cream cheese: ~1/2 cup (store-bought or homemade)
  • Fresh herbs: Dill, chives, parsley (finely chopped – about 2 tbsp total)
  • Garlic powder: 1/4 tsp (optional)
  • Salt & pepper: To taste
  • Lemon juice: 1 tsp (optional, for a tangy kick)

Instructions:

  1. Make the Herbed Spread
    In a small bowl, mix:
    • Vegan cream cheese
    • Chopped fresh herbs
    • Garlic powder (if using)
    • Lemon juice
    • Salt and pepper to taste
  2. Prepare the Bread
    • Lightly toast or keep the bread soft (your preference).
    • Spread a generous amount of the herbed cream cheese on one or both slices.
  3. Add Cucumber
    • Lay out thin, overlapping slices of cucumber evenly across the bread.
  4. Assemble the Sandwich
    • Place the second slice of bread on top.
    • Press gently and cut into halves or quarters, depending on serving style.
