Vegan Lion’s Mane Mushroom Steaks
Ingredients:
- 2 large Lion’s Mane mushrooms (or 4 medium-sized)
- 2 tablespoons olive oil (or avocado oil)
- 3 cloves garlic, finely chopped
- 2 tablespoons soy sauce or tamari (for gluten-free)
- 1 tablespoon balsamic vinegar
- 1 tablespoon maple syrup or agave nectar
- 1 teaspoon fresh thyme (optional)
- Salt and black pepper to taste
- Fresh chives or green onions, chopped (for garnish)
Instructions:
- Prepare the Mushrooms:
- Clean the Lion’s Mane mushrooms gently with a damp cloth or paper towel.
- Cut the mushrooms into thick slices or “steaks,” about 1 to 1.5 inches thick.
- Make the Marinade:
- In a small bowl, whisk together olive oil, soy sauce, balsamic vinegar, maple syrup, chopped garlic, thyme (if using), salt, and pepper.
- Marinate the Mushrooms:
- Place the mushroom slices in a shallow dish or ziplock bag.
- Pour the marinade over the mushrooms, ensuring they are evenly coated.
- Let them marinate for at least 20 minutes (or up to an hour in the fridge for deeper flavor).
- Cook the Mushrooms:
- Heat a skillet over medium-high heat.
- Add the mushrooms to the skillet along with the marinade.
- Cook for about 4-5 minutes on each side, or until they are golden brown and tender.
- Spoon some of the pan sauce over the mushrooms as they cook to keep them moist and flavorful.
- Serve:
- Transfer the mushroom steaks to a serving plate.
- Drizzle any remaining sauce from the pan over the top.
- Garnish with freshly chopped chives or green onions.
These vegan mushroom steaks are savory, slightly sweet, and have a meaty texture, making them a fantastic plant-based alternative for any meal.
