Vegan Lion’s Mane Mushroom Steaks

Ingredients:

  • 2 large Lion’s Mane mushrooms (or 4 medium-sized)
  • 2 tablespoons olive oil (or avocado oil)
  • 3 cloves garlic, finely chopped
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon fresh thyme (optional)
  • Salt and black pepper to taste
  • Fresh chives or green onions, chopped (for garnish)

Instructions:

  1. Prepare the Mushrooms:
    • Clean the Lion’s Mane mushrooms gently with a damp cloth or paper towel.
    • Cut the mushrooms into thick slices or “steaks,” about 1 to 1.5 inches thick.
  2. Make the Marinade:
    • In a small bowl, whisk together olive oil, soy sauce, balsamic vinegar, maple syrup, chopped garlic, thyme (if using), salt, and pepper.
  3. Marinate the Mushrooms:
    • Place the mushroom slices in a shallow dish or ziplock bag.
    • Pour the marinade over the mushrooms, ensuring they are evenly coated.
    • Let them marinate for at least 20 minutes (or up to an hour in the fridge for deeper flavor).
  4. Cook the Mushrooms:
    • Heat a skillet over medium-high heat.
    • Add the mushrooms to the skillet along with the marinade.
    • Cook for about 4-5 minutes on each side, or until they are golden brown and tender.
    • Spoon some of the pan sauce over the mushrooms as they cook to keep them moist and flavorful.
  5. Serve:
    • Transfer the mushroom steaks to a serving plate.
    • Drizzle any remaining sauce from the pan over the top.
    • Garnish with freshly chopped chives or green onions.

These vegan mushroom steaks are savory, slightly sweet, and have a meaty texture, making them a fantastic plant-based alternative for any meal.
