🌱 Ingredients
For the dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 2 tbsp olive oil
- 1 cup warm water (more as needed)
For the filling:
- 2 cups fresh spinach, chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup vegan feta or mozzarella-style cheese, crumbled/shredded

1. Make the dough
- In a large bowl, mix flour and salt.
- Add olive oil and warm water gradually, mixing until a soft dough forms.
- Knead on a floured surface for 5–7 minutes until smooth. Cover and rest for 30 minutes.
2. Prepare the filling
- Heat olive oil in a skillet. Sauté onion and garlic until fragrant.
- Add spinach and cook until wilted. Season with salt and pepper.
- Transfer to a bowl and mix in vegan cheese. Let it cool slightly.
3. Assemble the gozleme
- Divide dough into 4–6 balls. Roll each one into a thin circle/oval.
- Place filling on half of the dough, then fold over and seal edges.
4. Cook
- Heat a non-stick skillet or griddle over medium heat.
- Cook each gozleme for 2–3 minutes per side, until golden brown and slightly crisp.
- Brush lightly with olive oil if desired.
