You don’t need fancy ingredients to make it — just a simple dough, fresh spinach, and your favorite vegan cheese.

This vegan spinach and cheese gozleme is comforting, flaky, and absolutely packed with flavor. Perfect for lunch, dinner, or even as a snack, it’s one of those dishes that makes everyone gather around the table.


🌱 Ingredients

For the dough:

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 cup warm water (more as needed)

For the filling:

  • 2 cups fresh spinach, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup vegan feta or mozzarella-style cheese, crumbled/shredded
  • Salt & pepper, to taste

1. Make the dough

  • In a large bowl, mix flour and salt.
  • Add olive oil and warm water gradually, mixing until a soft dough forms.
  • Knead on a floured surface for 5–7 minutes until smooth. Cover and rest for 30 minutes.

2. Prepare the filling

  • Heat olive oil in a skillet. SautĂ© onion and garlic until fragrant.
  • Add spinach and cook until wilted. Season with salt and pepper.
  • Transfer to a bowl and mix in vegan cheese. Let it cool slightly.

3. Assemble the gozleme

  • Divide dough into 4–6 balls. Roll each one into a thin circle/oval.
  • Place filling on half of the dough, then fold over and seal edges.

4. Cook

  • Heat a non-stick skillet or griddle over medium heat.
  • Cook each gozleme for 2–3 minutes per side, until golden brown and slightly crisp.
  • Brush lightly with olive oil if desired.

5. Serve

  • Cut into wedges, serve warm, and enjoy with a squeeze of lemon or your favorite dip!
